The iPad with two dock connectors, as seen in a patent, does indeed exist. A specialized repair site has apparently acquired an iPad back cover with the two connectors, which would be obviously convenient for the official dock, currently limited to portrait mode.
The iPod touch with a camera exists. It’s even on eBay! Well, it’s a third-generation iPod touch (released almost a year ago), and the camera is not functional, but it’s there. The seller hopes that Apple will activate it soon…
